Once the vegetables are cooked, remove them from the pan, set aside and keep warm. In the same pan, without washing it, add a little more oil, warm it up and toss in the ginger slices; stir fry them for a little while and then start cooking the chicken. After searing it for a few moments, add a sprinkling of curry (adjust the quantity according to the type of curry you have and to your taste) and a few drops of lemon juice. Season with salt and continue cooking, stirring it or turning it from time to time.
