BASIC RECIPE: OVEN-BAKED POLENTA CHIPS

Instructions
- Preheat the oven to 200°C in fan mode.
- Prepare a parchment paper sheet twice the length of the baking tray you will use.
- Remove the polenta crust with a knife...
- ...and then cut the softer part into cubes. *** Do not discard the crust! By cutting it into strips and cooking it in a ventilated oven at 200°C for about 25-30 minutes, you can make some nice polenta bites! ***
- Place the diced polenta just cut into a bowl.
- Mash with a fork...
- ...and mix with your hands (depending on the consistency of the polenta, it might be useful to add a tablespoon of water) to create a small ball.
- Put the mixture between the two layers of parchment paper and roll out with a rolling pin until you obtain a very thin homogeneous sheet (about 1.5/2 mm); at this stage, to prevent the mixture from coming out of the parchment paper, it is useful to fold all the open sides of the parchment paper.
- Bake for about 20 minutes, until the polenta layer is golden and comes easily off the parchment paper. Since it's very fine, it is advisable to carefully check the cooking from 15 minutes onwards to prevent burning it.
- Remove from the oven and, once cooled, split the sheet into chips of any size or according to use.
- Serve.
